To give it a little extra flavor, you can add a few drops of white balsamic vinegar on top. And voila! It can be served as a side dish, or it can be the main dinner course if you add some grilled chicken and goat cheese to the mix.

  1. Holiday Finger Food

Start by cutting your red-skinned potatoes into thick wedges, and then brush them with a bit of olive oil. You then want to bake them until they are browned and cooked through.

Once baked, scoop out some of the flesh in the potato and fill it with a mixture of low-fat sour cream and smoked salmon. Top the whole thing off with some fresh dill.

  1. Hash Brown Casserole

This recipe uses potatoes as a base to create a delicious skillet supper. Start by cooking the potato mixture on the stove until it is browned and crisped at the bottom. You then want to use a cast-iron skillet to give the potatoes a perfect crust.

Finally, bake the potatoes with some smoky chorizo to create a blanket of melted cheese on top of the dish.

  1. Roasted Potatoes with Garlic and Herbs

Before you start, make sure you preheat the oven to 475 degrees. You then want to cook your garlic in oil for two minutes over medium heat. Once it is golden remove the garlic with a slotted spoon and set it aside. Take the remaining oil and coat the potatoes with it in a large bowl.

Once this is done, lay the potatoes on a baking sheet that’s been coated with cooking spray, sprinkle them with pepper and salt, and place them in the oven for 30 minutes. They are ready when they’re golden.

To finish the dish, combine the garlic with some parsley and lemon rind in a small bowl, and then sprinkle it over the roasted potatoes.

  1. Red Chile Potatoes

Start by boiling the potatoes in a Dutch oven for 20 minutes. Next, heat 1.5 tablespoons of vegetable oil in a nonstick skillet over medium heat. Add the potatoes and sauté them for 8 minutes.

Once they’re done, place the potatoes, some Chile Colorado, some salt and some onions in the pan, and then cook them on medium heat for 1 minute to get them thoroughly heated before serving.

  1. Tourned Steamed Potatoes

Knowing how to steam potatoes will come in handy with this recipe. However, if you don’t know, don’t worry, it is easy to pick up. Start by putting one cup of water and some salt into a saucepan that has a steamer basket inside.

While the water is boiling, take a paring knife and start peeling the potatoes. Add the potatoes to the basket and steam them until they are tender and all of the water has evaporated.

Finally, put the potatoes in a bowl and add a tablespoon of butter, white pepper, and chopped herbs. It’s as simple as that!

  1. Two-Potato Mash

This recipe uses sweet potatoes. To start, pierce them with a fork, and place them on paper towels inside the microwave. Set the microwave oven on high, cook the potatoes for 6 minutes, and then rearrange them for an even cook and let them microwave for 6 more minutes.

Once the potatoes have cooled off, peel and mash them. Add half a cup of sour cream, sugar, cinnamon, two tablespoons of butter and half a teaspoon of salt and stir until they are evenly mixed.

For the second part of the recipe, prepare some regular mashed potatoes and heat them in the microwave, and add milk, half a cup of sour cream, half a teaspoon of salt, two tablespoons of butter and pepper.

Stir the mix until it is even, and then add the mashed sweet potatoes on top of this batch and swirl it with a spoon. Do not blend the two completely.

  1. Twice-Roasted Sweet Potatoes with Chipotle

Preheat the oven to 400 degrees. Pierce the potatoes with a fork and place them on a baking sheet. Bake the potatoes for one hour and fifteen minutes, and once they’ve cooled off slightly, cut them in half lengthwise.

Scoop out most of the pulp, leaving the shell of the potato about a quarter of an inch thick. Add butter, adobo, salt, and chilies to the potato pulp and mix them in a food processor.

Once mixed, add some finely chopped onions to the pulp and mix them in. Spoon the mixture into the potato shells, and place them on a baking sheet. Let them bake at 400 degrees for about 10 minutes to heat them up, and they’re ready to be served.

  1. Mashed Potato Casserole

This recipe features two types of potatoes: Yukon gold, and baking potatoes. Boil the potatoes with some garlic and salt, and then press the mixture through a ricer into a large bowl.

Add half a cup of cooking liquid, teaspoons of salt and some cream cheese to the mix, and then bake it at 350 degrees for 20 minutes. The final touch is a combination of Parmesan cheese with panko, sprinkled over the potatoes. Broil for 4 minutes and the dish is done.

  1. Potato and Root Vegetable Mashers

This dish combines Yukon gold and sweet potatoes with turnips in order to create a truly rustic taste. Start by combining the three in a large saucepan filled with water. Bring the water to a boil, and let them simmer for 20 minutes.

Make sure to drain the vegetables well, and place them in a pan over medium-low heat. Add butter and mash the potatoes and turnips. Stir the mixture in sour cream, and then add salt and half a teaspoon of freshly ground black pepper.
