In a large bowl combine quinoa, tomato, orange, pomegranate, cucumber, currants, onion, garbanzo beans, parsley and mint leaves

In a separate bowl whisk together orange juice, apple cider vinegar, olive oil, honey and orange zest. Pour over quinoa and mix well. Season with salt and pepper

Refrigerate for at least 2 hours or overnight, mixing half way through, allowing quinoa to absorb all the flavours
