Preheat oven to 350 F and line an 8-inch springform pan with a circle of parchment paper

Place walnuts into a food processor and pulse to make a grainy-like flour. add cocoa, sorghum flour, rice flour, salt and baking powder. Pulse few more times until mixed. Transfer into a large bowl.

Separate eggs into two bowls; whip the egg whites until peaks form. In a separate bowl whisk together egg yolks, olive oil, agave and coffee. Gently fold in egg whites until combined. Add wet mixture into to dry ingredients and gently combine

Pour the batter into prepared springform pan and bake for 45 minutes. Allow the cake to cool before removing from the pan.

For the glaze; in a heavy bottom saucepan over low heat, melt the chocolate with butter. Remove from the heat and stir in vanilla. Immediately spread the glaze over cooled cake Garnish with berries if you wish
