To begin, mix the chicken with some buttermilk, a little salt and freshly minced garlic. Now, for the most flavourful coating. Add gluten-free cornflakes to a food processor and pulse until they become a texture of fine bread crumbs. The cornflake bread crumbs give the chicken that crispy southern fried chicken feeling. Then add the seasoning, the flavourful cajun seasoning is the key! For the coating to melt and stick to the chicken, I added some cheddar cheese. Once you roll the chicken pieces in the coating, then bake, very simple. I also wanted to mention this is an egg-free crispy chicken recipe. Now for the creamy feta sauce, after all, you can’t have popcorn chicken without a delicious creamy dipping sauce. I wanted to keep the sauce flavour simple because the popcorn chicken is already spiced up. In this sauce recipe, I used only four simple ingredients. The creamy feta sauce compliments the popcorn chicken perfectly because it balances the heat from the spices on the chicken.
