This is a simply roasted butternut squash with herbs and spices and a splash or olive oil. This delicious vegetable adds warmth to green salads or makes a healthy side to your main. Roasted butternut squash is a little sweet with a slight nutty flavour and is rich in vitamin C, vitamin A and plenty of fiber.
